Preparation

1
Preheat the oven

Set your oven to 180 °C and line a baking sheet with parchment paper. This step is essential for ensuring even baking and preventing the cookies from sticking.

2
Mix the dry ingredients

In a large bowl, combine the oats, protein powder, cinnamon, baking powder, and salt. Mix well to prevent lumps and ensure the baking powder is evenly distributed throughout the mixture.

3
Prepare the wet ingredients

In another bowl, combine the mashed bananas, nut butter, syrup (if using), and vanilla until smooth. The riper your bananas, the more natural sweetness they will add.

4
Combine the two mixtures

Pour the wet mixture into the bowl of dry ingredients. Stir with a spatula until you have a thick, slightly sticky dough.

👉 If the dough is too dry, add 1 tablespoon of plant-based milk. If it is too wet, add a little more rolled oats.
5
Add the chocolate chips

Gently fold in the dark chocolate chips to distribute them evenly throughout the dough. For an even more indulgent version, you can also add chopped nuts or dried cranberries.

6
Shape the cookies

Using a spoon or ice cream scoop, place balls of dough on the baking sheet, leaving a little space between each one. Flatten them slightly with the back of the spoon or damp fingers.

7
Bake for 12 to 15 minutes

Bake until the edges are lightly golden and the center is still soft. Be careful not to overbake: they may seem soft when they come out of the oven, but they will firm up as they cool.

8
Let cool

Wait a few minutes on the baking sheet before transferring the cookies to a cooling rack. This resting time is crucial for them to reach their ideal texture: crisp on the outside and soft on the inside.
